Protein Banana Muffins

Need a grab and go snack packed with protein, fiber and healthy fats? These muffins are perfect!

I love a good muffin, but so often muffins more closely resemble a cupcake instead of a balanced morning treat. These days i’m often jumping from one thing to the other and having something quick to grab that will keep me sustained is so important. These muffins are a winner. The use of natural sweeteners and unrefined oils help prevent a blood sugar spike, while the xtra protein and fiber hep keep you feeling full longer.

Recipe:

1/3 cup melted coconut oil or extra virgin olive oil

1/4 to 1/2 cup of honey or maple syrup (I usually reduce to 1/4 if I’m adding chocolate chips!)

2 eggs

1 cup mashed ripe bananas (about 2 1/2 medium bananas or 3 small bananas)

1/4 cup milk of choice

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 cups Almond Flour

1/2 cup protein powder of choice

1/2 cup ground flax seed

*Optional: 1/2 cup chocolate chips (bonus if you make it dark chocolate thats 70% or greater)

Instructions

  1. Pre-heat oven to 325 degrees F. Grease a 9x 5-inch loaf pan (I use the extra coconut oil)

  2. In a large bowl, beat the oil and honey together with a whisk. Add the eggs, mixing well, then mix in the mashed bananas and milk.

  3. Add the baking soda, vanilla, salt and cinnamon until well mixed, then add in the flour.

  4. Separate the batter into the muffin tins and place in the oven for 20-25 min.
