Chocolate Veggie Protein Muffins
Kid Friendly Chocolate Veggie Protein Muffins
I’m always looking for whole food healthy snacks for me and the kids that also taste great. I’ve been experimenting with this recipe for a while and have finally got it right for me! These muffins are great for sneaking in some veggies, protein and staying away from processed sugar. Toddler, husband and baby approved!
2 large eggs
1 mashed over-ripe banana
1 cup power greens or baby spinach
1/2 cup melted coconut oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2 teaspoons apple cider vinegar
1 cup almond flour (Note: cut flour in half if you want to use regular flour or whole wheat flour)
1/2 vanilla protein powder (or chocolate) (Note: you can leave this out and just add another 1/2 cup flour)
1/2 cup flax meal
1/2 cocoa powder
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup dark choclate chips (**optional)
Instructions:
Preheat your oven to 350 ℉ and line a 12-hole muffin tin with liners or oil
Combine eggs, banana, carrots, spinach/power greens, maple syrup/ honey, oil, vinegar, and vanilla until your mixture is smooth.
Then add flour, baking powder, baking soda, salt, cocoa powder and cinnamon, until just mixed.
If you want to add the dark chocolate chips, you can fold them in now. (I usually do about half and half because I leave them out of the baby muffins)
Pour the batter into prepared muffin tins and bake for 20-23 minutes or until a toothpick inserted into the middle comes out clean.
